Crockpot Chicken Adobo

Ingredients

3# Chicken Thigh, 8 thigh, (bone and skin removed ) or any other chicken parts however nutrtional value may change
1.5 small sweet Onions, sliced
8 to 12 cloves Garlic, crushed and minced. I use 12
1 tsp Peppercorns (not on add list)
1 cup + 2 tbs Kikoman Lite Soy Sauce,
3/4 to 1 cup Distilled White Vinegar, I use 1 cup, some may like red wine vinegar
2 Bay Leaf,
1 cup (8 fl oz) Water
Directions
1. Place chicken in slow cooker
2. In a small bowl mix the onion, garlic, soy sauce, vinegar, pepper and water and pour over the chicken.
3. Cook on low 6 to 7 hours
4. eat over brown or white rice ( Not included in nutritional info)
Note. I like to brown the garlic and onion in water or spray oil before adding it to enhance the flavor.
Makes 8 servings.
i know it may seem like a lot of sodium, but you don't actually consume all the sauce. it is used to flavor the rice.(although as a kid, I would sip it by itself and it wasn't a light version, sure miss those daysLOL)
