Chicken Enchiladas

Introduction

This is a little something that is a compilation of a few recipes (my sisters filling and Rockin' Robins enchilada sauce) . The serving size is 2 enchiladas (because who can eat just 1) This is a little something that is a compilation of a few recipes (my sisters filling and Rockin' Robins enchilada sauce) . The serving size is 2 enchiladas (because who can eat just 1)

Ingredients

    1/2 lb boneless skinless chicken breast, cooked and shredded
    2 cup bell pepper, sliced
    2 cup onion, sliced
    1 can (4.5 oz) chopped green chiles
    8 oz reduced fat shredded cheddar cheese
    8 tortilla (fajita size)
    1 small can Old El Paso enchilada sauce

Directions

Preheat oven to 350 degrees.

Saute onion and green pepper in olive oil. Combine chicken, green chiles and cheese in a bowl. Add the cooked onion and green pepper to chicken and green chiles and combine.

Spray 9x13 baking dish with cooking spray. Add the filling to tortillas and roll up. Place in baking dish seam side down.

Cover the rolled tortillas with enchilada sauce.
Bake for 30 minutes uncovered.

2 enchiladas is 1 serving
