Smothered Sweet Potatoes

High in fiber, protein, potassium & flavor!
These sweet potatoes are topped with a warm mix of black beans, tomatoes, green onions & seasonings. Very easy & can be made completely in the microwave.

These sweet potatoes are topped with a warm mix of black beans, tomatoes, green onions & seasonings. Very easy & can be made completely in the microwave.

Number of Servings: 2

Ingredients

    2 medium sweet potatoes, cooked, baked in skin, without salt, (2" dia, 5" long, raw)
    Black beans, 1 cup
    Fresh red tomatoes, .75 cup, chopped
    Green onion, 1 stalk
    Ground Cumin, 1 tsp
    Tobasco Sauce, 1 tsp
    Light sour cream, 4 tsp
    Fresh cilantro, 1 Tbs

Directions

Scrub & poke the sweet potatoes with a fork before putting in the microwave.

Heat until the potatoes are soft all the way through the center.

Chop a medium tomato (about 3/4 cup worth) & 1 green onion stalk.

Add to a microwave soft bowl.

Stir in 1 cup of drained/rinsed black beans, cumin & tobasco sauce.

Cover with plastic wrap & heat for 2 minutes. Stir & mash slightly with a fork.

Slit open potatoes & spoon half the bean/tomato mixture over each potato.

Top each with 2 tsp of sour cream & 1/2 Tbs chopped cilantro.

Serve warm.
