Cereal Crunch Cookies

Introduction

I love these cookies cause you can add or take away the "optional" stuff to fit your tastes. And you can use any kind of flake kind of cereal. I have used Raisin Bran and Honey bunches of oats (which is a favorite with my family). I love these cookies cause you can add or take away the "optional" stuff to fit your tastes. Number of Servings: 30

Ingredients

    1 C Wheat Flour
    1/2 C all purpose flour
    1 tsp. Baking Powder
    1 tsp. Baking Soda
    1/2 cup old fashion oats or Steal cut oats (steal cut makes for a different texture)
    1/2 c apple sauce (our you can use butter)
    3/4 packed brown sugar
    1/2 c sugar (I used 5 pks truvia)
    1 egg
    1 tsp vanilla
    1 C Special K (or any flake kind of cereal)
    1/2 c sweetened or unsweetened coconut
    Options:
    1/4 c raisins Or craisins
    1/4 cdark choc chips or white choc goes well with craisins
    1/4 c chopped pecans



Directions

Preheat oven to 350. Mix flours, baking powder, baking soda and oats; set aside. Beat butter (or apple sauce) and sugars in large bowl with mixer on med speed until light and fluffy (won't be light and fluffy with applesauce). Add egg and vanilla; mix well. Gradually add flour mix, beating until well blended after each addition. fold in cereal, coconut, and options.

Drop heaping teaspoonfuls of dough, 2 inch apart onto sprayed baking sheet.

Bake 10-12 (depending on oven make take a couple more min). or until lightly browned.
Wire rack to cool.
Makes 24-32 cookies (depends how big your heaping tsp is).
