4 yellow squash
3 bell peppers (red and green add to the rainbow effect, or go all out and use some of the purple ones - the taste is the same)
2 small onions (or 1 large)
.75 cup of cooked whole wheat pasta
.5 cup pesto
1 T olive oil
Serve topped with a generous dollop of fresh pesto.
