Summer Rainbow Stirfry

Introduction

Lots of summer veggies to use up - makes for a great healthy dish. Lots of summer veggies to use up - makes for a great healthy dish.
Number of Servings: 4

Ingredients

    4 yellow squash
    3 bell peppers (red and green add to the rainbow effect, or go all out and use some of the purple ones - the taste is the same)
    2 small onions (or 1 large)
    .75 cup of cooked whole wheat pasta
    .5 cup pesto
    1 T olive oil

Directions

In a large saucepan, saute the squash and onions in a little bit of olive oil. When the onions are starting to turn clear, add the peppers. Cook for about 5 more minutes then remove from heat. Add the cooked pasta and mix.

Serve topped with a generous dollop of fresh pesto.
