Veggie and Cheese Frittata

Introduction

Number of Servings: 4

Ingredients

    1 tbsp olive oil
    1/2 c diced green peppers
    1/2 c diced onion
    1/4 c diced mushrooms
    1/4 c shredded cheddar
    3 tbsp parmesan cheese
    5 eggs
    Salt and pepper to taste

Directions

Preheat oven to 325.
Heat 1 tbsp of olive oil in a non-stick, ovenproof pan. Saute the green peppers, mushrooms and onion until soft. In a bowl, whisk the eggs with salt and pepper. Add eggs to pan, stir briefly, then let cook over medium heat for 4 minutes. Add cheeses. Move pan to over and continue cooking for 10 minutes or until the eggs are firm.
