Jodi's Crispy Chicken Wing's, and all the Trimmings

Ingredients

    Wings
    6 med. chicken wings or 5 small to med. chicken thighs
    1 cup buttermilk
    2 teaspoons Mrs. Dash seasoning blend Southwest Chipotle
    2 cloves of garlic, pressed
    butter flavored cooking spray
    1/2 cup Italian style bread crumbs
    30 sprays of parkay 5 sprays of each wing

    Zuccini and mushrooms
    1 tbls blue bonnet light margarine
    1/4 chopped onion
    1 large zucchini
    4 med. mushrooms
    1 packet of equal
    1 tsp lemon juice
    salt and pepper to taste

Directions

First, put buttermilk, pressed garlic and southwest seasoning into a bowl with lid, or you can use a ziplock bag. make sure all of your ingredients are well mixed into milk. Wash 8 whole chicken wings and place them into the bowl or bag and make sure each one is coated let sit for about 1 hour in fridge. If you have a spare minute or so shake them around every so often during that hour.

While that is marinating, line a 9x13 pan with foil and spray with butter flavored cooking spray.

Put bread crumbs into a shallow dish.

take wings out of fridge, and coat each one with the bread crumbs then placing them onto the foiled pan. Spray each wing 5 times.

place in 350 degree oven for 1 hour, wings should be crisp.
Keep a check on your wings depeding on the size, it may take them a little less time to cook.

3 wings per serving

While wings are cooking melt 1tablespoon blue bonnet light margarine in a med. skillet. add 1/4 cup sliced onion, let them saute about 2 min. add 4 mushrooms sliced, and add zucchini which is cut in half them sliced.
add lemon juice, equal and salt and pepper to taste

During the last few minutes, turn on rice in microwave, and for the 90 seconds and then let it stand for about 1 min.

According to my calculations, the calories added up to 481, but according to the recipe calculator 481. Either way for an entire meal it great.
if using thighs the entire meal will be 539 calories.
