8 fat free flour tortillas
1lb boneless skinless chicken breast
2tsp taco seasoning
1/2 cup water
2 cups Picante sauce or salsa (I use mild but you can use what you prefer)
1 cup skim milk
4 oz shredded 2% milk cheddar cheese
Preheat oven to 350
Place chicken mixture into tortillas and roll up, making sure ends are closed. Lay rolled enchiladas in a 13X9 pan. Overlapping a little is fine. Cover with salsa and cheese. Add milk around the edges of the pan. Cover with foil and bake for 30 minutes or until cheese is melted. Serve with some fat free sour cream if you like.
