Chicken Enchiladas

Introduction

This recipe is lighter than most enchiladas and the flavor is great. It freezes well and leftovers make great lunches! This recipe is lighter than most enchiladas and the flavor is great. It freezes well and leftovers make great lunches!
Number of Servings: 8

Ingredients

    8 fat free flour tortillas
    1lb boneless skinless chicken breast
    2tsp taco seasoning
    1/2 cup water
    2 cups Picante sauce or salsa (I use mild but you can use what you prefer)
    1 cup skim milk
    4 oz shredded 2% milk cheddar cheese

Directions

Cook chicken breast until no longer pink. Cut into small pieces or mash with a ground beef masher. Add water and taco seasoning. Cook on medium until it thickens up to your preference.
Preheat oven to 350
Place chicken mixture into tortillas and roll up, making sure ends are closed. Lay rolled enchiladas in a 13X9 pan. Overlapping a little is fine. Cover with salsa and cheese. Add milk around the edges of the pan. Cover with foil and bake for 30 minutes or until cheese is melted. Serve with some fat free sour cream if you like.
