Spiced up rice and beans

Introduction

Number of Servings: 4

Ingredients

    1/2 cup dry brown rice
    1 medium onion chopped
    1 zucchini chopped
    1 can black beans (~ 1.75 C), canned and rinsed
    1 can whole tomatoes (~1.75 C)
    2 cloves of garlic, chopped (or more if you want)
    Oregano
    Basil
    Black Pepper

Directions

Heat a little olive oil in a deep pan and sautee onions, when they start to soften add the garlic and zucchini. Season with spices. When the zucchini starts to soften add the rice and allow to get a little brown. Add the canned tomatoes and black beans, reduce heat and simmer until the rice is tender.

Serve as is, or add a little cheese, for extra zing.

Makes 4, 1 cup servings.
