Minestrone Soup

Introduction

Very hearty and low cal! Very hearty and low cal!
Number of Servings: 12

Ingredients

    1.5 cups chopped celery
    1.5 cups chopped onion
    3 choped baby zucchini
    3 chopped small summer squash
    garlic
    1 can chopped italian seasoned tomatoes
    2 cans white/red kidney beans drained and rinsed
    2 10 oz boxes chopped frozen spinach thawed and squeezed

Directions

Saute first 5 ingredients in olive oil, seasoning with kosher salt and fresh black pepper, Add tomatoes and paste; stir and simmer 5 minutes. Pour in broth, and bring to a boil. Add beans, and bring to a boil. Finally add spinach and simmer 10 more minutes. Season to taste with salt, pepper, and fresh herbs.
