Ingredients

4 ears corn, corn cut from cobs
1 cup cherry tomatoes
1 medium onion, slice thin
1 cup sliced red, green and yellow peppers
1 T olive oil
1 t ground cumin
1 t smoked paprika
1 T garlic powder
1 lime, juiced
1 tsp. hot sauce
Directions
saute peppers and onions in oil until soft. add spices. add tomatoes and corn, lime juice and hot sauce. Heat through. Can be served warm or at room temp.
