Chili Cottage Cheese Casserole

Number of Servings: 4

Ingredients

    1 cup egg whites
    2 eggs
    1/2 cup green pepper, chopped fine
    1/2 cup onion, chopped fine
    1 can green chili peppers
    1/4 cup flour (whole wheat or barley)
    1/2 tsp baking powder
    1 cup lowfat cottage cheese
    2 oz lowfat cheese (mozzarella or other)
    hot sauce, to taste

Directions

Beat egg and egg white; add flour and baking powder, whisk until most lumps are gone. Add remaining ingredients and mix well. Pour into greased pie dish (8 or 9 inch). Bake at 400F for 15 minutes; reduce heat to 350F and cook for 30 minutes or until done in the middle.
