6 oz smoked Atlantic Salmon
2 large hard boiled eggs, sliced
1 pint (12 ozs) grape or cherry tomatoes
2 heads radicchio (approximately twenty leaves)
1/4 head red leaf lettuce
1/4 head bibb lettuce
1 bunch heart of romaine lettuce
1/4 cup fresh basil leaves
1/4 cup fresh parsley, chopped
4 TBSP shredded parmesan cheese
2. Shred salmon with a fork and add to the greens.
3. Add sliced egg, tomatoes and parmesan and toss. Serve cold.
Will serve 6 as a meal or 8-10 as a side salad.
For dressing, try my Honey-Mustard Viniagrette with Dill.
