1.5 tbsp olive oil
1.5 cups firm tofu, diced
1 onion, sliced thinly
2 sweet bell peppers (green, red, orange, or yellow), sliced into thin strips
1.5 tsp ground cumin
1 tsp oregano
.25 tsp black pepper
.25 tsp red pepper or cayenne
.25 tsp garlic powder
Heat olive oil in a large frying pan, then saute tofu, onion, and bell peppers until slightly softened. Add spices and saute until veggies are soft and tofu is slightly crispy around the edges.
Serve in a tortilla, over chips, topped with salsa and/or cheese if you like.
