Mead and Mustard Chicken

Introduction

I was craving honey mustard chicken at work one day. We didn't have any honey, but we had MEAD!. Mead is made from honey, so it is very sweet. Also high in Calories, but has a lot of other good stuff in it, so a drink from it every so often is okay.
My first attempt at this recipe, I kept the skin on the chicken. That actually blocked the flavor of the mead getting to the chicken. Defiantly cook this with no skin on the chicken.

Ingredients

    4 chicken breast, boneless, skinless
    Tbs. paprika
    Tbs. black pepper
    1 Tbs. dry mustard
    1 c. Mead
    1 Tbs. Unsalted Butter

Directions

1. Spray a skillet with cooking spray
2. Brown chicken in skillet. About 3 minutes on each side., set aside.
3. Melt the butter in the same skillet.
4. Add the mead, and spices.
5. Bring to a boil and reduce to 3/4 cup about 10 minutes. Stirring constantly.
6. Spray a baking pan with cooking spray.
7. Place chicken in baking pan. Cover with mead.
8. Bake at 350 for an hour, basting as needed.
