Caribbean Johnny Cakes

Introduction

Yummy little rounds of fried dough, can be split open and stuffed with things, or eaten as is. Add different spices to make savory or sweet. Prep time includes 30 minute resting period. Ingredients

    2 cups all purpose flour
    1/8 cup cornmeal
    1 tsp baking powder
    1 tsp salt
    1/8 tsp sugar
    1 tbsp oil
    1/2 - 1 cup warm water

Directions

Mix all the dry ingredients together in a big bowl.

Add oil.

Add warm water a little at a time, mixing well between each addition until a dough forms. The dough shouldn't be sticky.

Cover dough and let rest for 1/2 hour.

Uncover dough and roll out, cut into pieces and knead the pieces into balls. Flatten the balls slightly with your hands. Let the rounds rest while the fry oil heats.

Heat about 1" of oil in a deep fry pan or pot to 350 or when a piece of tester dough starts to sizzle when added. Fry the rounds a few at a time until golden brown. Drain on wire rack, or paper towel or brown paper bags.

Enjoy!

To make sweet use 1 tsp sugar, 1 tsp cinnamon and a dash of nutmeg.

To make savory add a little of whatever spices you're using in the dish you want to serve it with.

Recipe makes 14 rounds (2.5" x 0.25" when raw)
