Spinach & Sausage Muffins

Introduction

My kids love these muffins so I just try to vary what I put in them. My kids love these muffins so I just try to vary what I put in them.
Number of Servings: 12

Ingredients

    5 Eggs
    1/2 cup of 2% milk
    1/4 cup Mozzarella cheese, shredded
    1 Tablespoon flour
    8 oz turkey breakfast sausage
    1/4 cup Parmesan cheese
    1 cup spinach
    Parsley
    salt to taste

Directions

Cook Sausage.
In separate bowl mix all other ingredients. Add cooked sausage.
Preheat oven to 350 degrees. Spray muffin tin with Pam. Add a 1/3 cup of mixture to each muffin. Bake 15 minutes.

Makes 12 muffins or 24 mini muffins.
