Calypso Cod

Ingredients

    2 Tbls fresh lime juice
    2 Tbls olive oil
    1-1/2 tsp crushed garlic
    2 tsp hot pepper sauce
    20 oz cod
    Strips of lime rind to garnish

Directions

In a bowl, whisk together the lime juice, olive oil, garlic, and hot pepper sauce to taste.

Grill (if using cod steaks) for about 4 to 6 minutes on one side, basting frequently with the sauce, then turn and cook on the other side for another 4 to 6 minutes, again basting frequently, until opaque but not overcooked. Serve garnished with lime rind.

If using fillets, pre-heat oven to 350. Place fillets on a sheet and bake for 10 minutes or until cooked.
