Sugar-Free Beans for "Beans on Toast"
Submitted by: LAFEMMEDELALUNEIntroduction
I love the British breakfast item "beans on toast", but had a hard time finding baked beans without added sugar. So I made up my own version. ;)These aren't as dark in color as regular baked beans, and they are somewhat milder (since they are designed to be eaten at breakfast). Feel free to double the first 5 ingredients or add your own spices. I love the British breakfast item "beans on toast", but had a hard time finding baked beans without added sugar. Number of Servings: 6
Ingredients
-
1T tomato paste
1T apple cider vinegar (or any mild vinegar)
1T brown mustard
1 dash liquid smoke (optional)
1T raisins, chopped
1c chopped onions (or to taste)
2 cans white beans, drained
Directions
This recipe makes six servings that are a heaping half cup each. Note that the toast is not calculated into the recipe, as the choice of bread will vary.
1. Mix the first 5 ingredients together.
2. Add the mixture, onions, and beans to a medium-sized pot. Stir to moisten.
3. Heat the mixture to a boil (or to a "steam", if the mixture starts out on the dry side), stirring often so as not to let the bottom burn.
4. Cover, and simmer 5 minutes.
5. Remove the lid, and simmer uncovered for 5 minutes.
(For a wetter version, cook the entire 10 minutes covered instead of 5 and 5.)
6. Spoon over toast and serve.
Other ideas:
To re-heat: Toast the bread. Spoon the beans over the bread. Microwave for 30 seconds to 1 minute.
This dish goes great with fresh tomato on the side!
