Creamy mashed potatoes with scallions

Introduction

I'm going for most things in moderation, so full-fat sour cream was used to calculate, but obviously you could cut back on it or use the reduced-fat kind and omit the salt if desired. Also, I think next time I might try upping the flavor with some paprika and such. Ingredients

    4 medium baking potatoes
    1/4 cup 2% milk
    4 Tbsp. sour cream
    2 large scallions, finely chopped (it's hard to find chives around here!)
    Salt and freshly ground black pepper to taste

Directions

Clean and peel potatoes (if desired) and cut into roughly 1-inch cubes. Boil until tender, about 20-30 minutes. Drain and place in bowl of electric mixer (or work out arms by mashing by hand!). :) Add milk and sour cream and mix on medium until smooth. Add scallions and seasonings and mix on low to incorporate.
