Apricot Crisp

Introduction

I used this same recipe with a pie crust as a child in the summer. We had an apricot tree in the back yard and I would eat this for breakfast every morning. Now that I'm a little older, I can't eat pie everyday so I make a crisp instead. All the measurements are approximations based on my taste, so you might want to adjust the sugar if you like a really sweet pie or more butter for the topping, but I don't think it needs it.

1/2 of crisp is a serving. : ) Practically a health food with 4 g protein and 5 g fiber.

Ingredients

    Filling:
    Apricots, fresh, 3 cup chopped
    Flour, white, 1 Tbls
    Granulated Sugar, 1 tsp
    *************************
    Topping:
    Butter, salted, 2 tsp
    Flour, white, 2 Tbls
    Granulated Sugar, 2 tsp

Directions

Chop up the apricots, leaving the skin on. Mix with 1 tbls flour and one tsp sugar and pour into a greased baking dish (I use a vintage 1 & 1/2 pint baking dish) . Mix remaining butter, flour and sugar into a crumb topping, pour over fruit and bake at 375 for about 45-50 min or until topping is golden and the fruit is bubbling in the center. Makes two servings.
