Dairy-Free Alfredo Sauce

Delicious vegan, rich and creamy, generously spiked with nutritional yeast, and awesome with optional vegan "chicken" Strips, over any pasta you like, or even on a big baked potato. You won't miss the dairy! Number of Servings: 8

Ingredients

    Makes 8 1/2 cup servings

    1 block Mori-Nu silken tofu
    2 cups plain soy milk (unsweetened)
    1/2 cup Earth Balance margarine
    3 tablespoons nutritional yeast
    2-3 teaspoons garlic powder
    2 tablespoons onion powder
    pinch ground nutmeg
    2 teaspoons salt
    2 teaspoons black pepper
    2-3 tablespoons cornstarch (dissolved in 1/2 cup soymilk)

Directions

In food processor, combine all ingredients except 1/2 cup soy milk and the cornstarch. Mix well.

Heat in saucepan over low heat, whisking frequently until all ingredients are blended and mixture is nearly bubbling. Add in cornstarch mixture, a little at a time until desired thickness. If you add less than 3, consider that in calorie count.

I love this with a few strips of Morningstar Farms Vegan Chicken Strips sauteed in a little oil spray and added just before serving to a portion of pasta of your choice. We had it over fettuccine! Magnifico!
