Ingredients

    6 cups chopped mixed vegetables and a drizzle of olive oil.

    Salt, basil, thyme, and pepper to taste.

Directions

Roast veggies at 425 degrees for 45-50 minutes.

Puree in a blender or food processor to desired consistency.

Makes six 4 oz. servings.
