Barley and Tuna Salad

Introduction

This is a great main dish salad or leave the tuna out and is a wonderful side salad This is a great main dish salad or leave the tuna out and is a wonderful side salad
Number of Servings: 6

Ingredients

    3.5 cups cooked barley
    11/2 tea. Dijon mustard
    11/2 tablespoon white wine vinegar
    4 Tablespoons olive oil
    2 celery stalks-diced
    4 medium green onions-thin sliced
    1 small green pepper-diced
    5 medium radishes- thin sliced
    1 medium pear-chunk diced
    1 package (12 oz) Starkist Chunk light tuna in water
    2 plum tomatoes-diced
    1 avocado-chunk diced

Directions

1. Put cooked barley in large bowl.
2. Mix white wine vinegar and mustard in small bowl. Use whisk and mix in the olive oil.
3. Pour over barley and mix well.
4. Add pepper, celery, pear, tomatos, green onions, radishes to barley mixture.
5. Taste for seasoning-Add salt and pepper to taste.
6. Add Tuna and Avocado and lightly mix.

Makes 6 1 cup servings
