Mac & Cheese, Kay's Remake of Cabot Cheese Recipe

Ingredients

    2 c. small dry elbow macaroni (whole wheat)
    cooking spray
    3 T. whole wheat flour
    2 c. skim milk
    1/4 t. dry mustard
    1/4 t. garlic powder
    1/4 t. salt
    black pepper to taste
    pinch ground cayenne pepper
    dash Worcestershire sauce
    2 oz. fat-free cream cheese
    8 oz. Cabot 75% Reduced Fat Cheddar, grated and divided (about 2 cups)
    1/3 c. Italian-flavored or plain dry breadcrumbs.


Directions

1. Cook macaroni and drain well.
2. Preheat oven to 350F. Spray 2 1/2 quart baking dish with cooking spray.
3. Place flour in large saucepan over medium hear, gradually whisking in milk. Add mustard, garlic powder, salt, black pepper and Worcestershire. Continue cooking until sauce thickens, stirring constantly.
4. Reduce hear to low. Stir in cream cheese until well blended. Add 2/3 of shredded sheese and stir until mested. Add macaroni, stirring until well coated. Pour into prepared baking dish.
5. Toss remaining shredded cheese wtih breadcrumbs and sprinkle over top of macaroni; spray with cooking spray.
6. Bake for 20 minutes, or until golden on top and bubbling throughout.
