Ingredients

butter flavor cooking spray
10 egg whites
5 whole eggs
1/2 tsp ground cinnamon
1/2 tsp vanilla extract
10 tsp splenda (5 packets)
1/2 c grated carrots
3 c sliced raw/uncooked sweet potatoes
Directions
Heat oven to 350°. Coat a 13x9" casserole dish with cooking spray. Line bottom of plate with potato slices. Cut remaining slices in half and arrange around side of plate. Sprinkle a dash of cinnamon over potatoes. Bake 12 to 15 minutes. Remove from oven and set aside.
Mix egg whites, whole eggs, cinnamon, vanilla, splenda, and carrots. Bake 40 to 50 minutes or until egg is set and a knife inserted into pie comes out clean. Remove from oven and let sit for 5 minutes. Makes 5 servings.
