Cocoa Island Muffins

Number of Servings: 16

Ingredients

    1 3/4 cups whole wheat flour
    1/4 cup cocoa powder
    1 cup splenda
    1 tsp baking powder
    1/4 tsp baking soda
    1/4 tsp salt
    2 large eggs
    1/4 cup canola oil
    6 Tbsp water
    2 ripe bananas
    1 tsp vanilla extract
    1/2 cup shredded coconut
    1/2 cup walnuts, chopped
    1/2 cup chocolate chips

Directions

Mix flour, cocoa powder, baking powder, baking soda, & salt together. In another bowl, mix bananas, eggs, oil, water, splenda, and vanilla. Beat until well blended. Add flour mixture and stir until it is moistened. Stir in chocolate chips, coconut, and nuts.
Spoon 1/4 cup mixture into each muffin liner. Bake on 350* for 25 min or until toothpick comes out clean.
Makes 16 muffins.
