IntroductionMakes 10 1-cup servings (approx.) Makes 10 1-cup servings (approx.)
1 whole English cucumber, diced
1-½ cup raw celery, diced
1 cup sweet red peppers, chopped
½ cup red onions, raw, chopped
4 ½ cups brown rice, long grain, cooked
3 oz. crumbled reduced fat feta cheese
1 cup sliced black olives
½ cup low-fat Greek salad dressing
While rice is cooking, chop and dice the rest of the ingredients except the dressing.
When rice is done cooking, combine all of the ingredients including the dressing.
