Leftover Magic: Sesame Ginger Stir Fry

Introduction

Leftover Magic recipes attempt to show how to use up what you have in the refrigerator, without eating the same meal twice.

This version uses leftover chicken, rice and water chestnuts.

Ingredients

    1 teaspoon olive oil

    1/3 cup chopped bell pepper (any variety)
    1/3 cup chopped onion (any variety or try leeks, scallions or shallots)

    1 teaspoon minced garlic
    3 tablespoons chopped water chestnuts (if you don't have water chestnuts skip this item and add a few chopped nuts on top just before serving for crunch. You can use 3 peanuts for the same calorie count as the water chestnuts. Add 5 calories for each additional nut)

    2.7 ounces cooked chicken cut in bite-size pieces

    1/3 cup cooked rice (any variety), cous cous or quinoa

    1 1/2 tablespoons low fat sesame ginger dressing (I used Newman's Own)

Directions

1. HEAT the olive oil over high heat in a wok or skillet for about 1 minutes

2. SAUTE the onion and peppers for a minute

3. ADD the garlic and water chestnuts for about 30 seconds

4. ADD the chicken for 30-60 seconds

5. ADD the rice for about 15 seconds and then pour in the dressing.

6. STIR until the dressing is well combined with the rest of the ingredients and everything is hot.

SERVE (Top with nuts if you are not using the water chestnuts.)
