Breaded Popcorn Shrimp

Ingredients

1/4 cup whle wheat flour
1/2 cup oat bran
1/2 cornmeal
2 tbsp honey
2 egg whites
1 pound shrimp
Directions
Preheat oven to 425 degrees. Beat egg whites and honey in a shallow bowl. Place the flour in a shallow dish. Pour all the cormeal and oat bran into a plastic baggie.
First dredge the shrimp in the flour, then dip into the egg mixture, then shake in the baggie with the oat bran and cornmeal.
Place the shrimp on a baking sheet that has been sprayed with non-stick spray. You can spray the shrimp with olive oil.
Bake for about 6 minutes on each side.
I like to serve with lemon wedges and sweet potato fries.
