Ingredients

    1/2 cup white bean puree
    1/2 cup fat free, plain yogurt
    1/2 cup unsweetened applesauce
    2 tbsp becel olive oil spread
    1 tsp vanilla extract
    1 egg
    1/4 cup darkest brown sugar
    1/2 tsp stevia powdered extract
    1/3 cup all-purpose, unbleached, enriched flour
    1/3 cup wheat germ
    1/4 cup oat bran
    1/2 cup pure dark chocolate chips (or a bar broken into pieces)

Directions

Preheat oven to 350 degrees. Combine bean puree, yogurt, applesauce, becel, vanilla, egg, sugar and stevia in a large bowl. Add remaining ingredients. Drop by teaspoonfuls onto cookie sheet. Cook for 7-8 minutes.

Makes 36 cookies.
