1 small head cauliflower, broken into bite size pieces
1 small green pepper, chopped
1 cup carrots, chopped
1 cup red onion, chopped
1 pkg. Edamae shelled (soy beans in pod)
2 cups red kidney beans, rinsed
3 cloves garlic, chopped
1/3 cup olive oil
1/3 cup lemon juice
1/4 tsp yellow mustard
Prepare vegetables and beans and place into a salad bowl, toss with dressing and let sit in the refrigerator for a couple of hours or overnight.
