Ingredients

    2 servings (2 cups) Slow Cooker Provencal Chicken and Beans
    4 8-inch corn tostadas*
    4 c mixed salad greens
    3/4 c tomato salsa
    1/2 c monterey jack cheese, shredded

    *Some grocery stores carry tostadas, which are slightly drier and crispier than tortillas. If you can't find them, use corn tortillas--or your favorite kind of wrap.

Directions

Preheat oven to broiler setting. Place tortillas on a sheet pan. Layer on 1/2 cup of the bean mixture then salsa and 1/8 cup (1 ounce) of cheese. Heat under broiler just until the cheese melts. Place a cup of mixed greens on top of each tostada and serve.

    I made this, but with a low-carb high-fiber tortilla, and I put it in the toaster oven until it was crisp. Really yummy, and a great way to use the leftovers from the original chicken dish. - 1/21/10

    I really liked that I could use leftovers from a different dish for a totally new dish with this recipe! I made this in a pan and didn't use the tostadas. We loved this recipe even more than the original! - 1/8/10

    I tried it both ways - greens on the bottom toasted and on the top cold - I kinda like the toasted better... I heated in microwave for about 25 seconds and the meat mixture was already hot - it was just right I will definitely make again! - 7/18/10

    i found the italian flavor from the original dish to be contradictory with the salsa. but it was good. i used whole wheat tortillas and put them under the broiler for a few minutes before topping them. they stayed crispy. - 11/4/10

    I used the leftover Salsa Chicken recipe. Toasted up a high fiber low carb tortilla and put the lettuce and chopped tomato on top. So filling and so good for losing weight. - 1/19/10

  • We liked this better than the Slow Cooker Chicken Provincal and Beans. I suggest heating the meat/bean mix and the salsa before putting on the tostadas and topping with cheese. It would stay hot longer. I'll be making this one again! - 1/16/13

  • Why would you heat the greens? The recipe says to put them on top AFTER you broil and melt the cheese. I imagine cooked, the greens would be a pretty soggy mess, no?

  • I didn't have leftover beans but put some chick peas in the food processor along with some salsa and it was delicious! The tostada was a big hit with my husband too.   • Baked the tortillas at 400 for 5 minutes until golden and puffy then topped with shredded chicken and provencal mixture, salsa and cheese. Broiled about 2 minutes; topped with greens and served. Delicious! - 11/21/11

  • This sounds tasty, and could also be "tweeked" in a few ways (differnt meat, add beans, etc), some of which other people have suggested. I think I'll keep everyone's comments and ideas for options/changes in mnd and make this to surprise my Spaniard Hubby this coming week! - 10/29/10

  • This is a really fun way to use leftovers. I had used blackbeans and Rotel Tomatoes in the original crockpot recipe, so I didn't even need the salsa for it to be very spicy and Mexican tasting. - 9/2/10

  • Delicious way to serve left-overs, but pretty high in sodium. I used no-sodium salsa and (actually) no-sodium beans with the chicken, etc. Used whole wheat, low-fat tortillas which I grilled first to make crispy and pre-heated the meat/bean mixture. Less time under broiler so crispier greens - 7/15/10
