Introduction

Creamed Cabbage and Chicken Soup Creamed Cabbage and Chicken Soup
Number of Servings: 6

Ingredients

    2 cups chicken broth
    1 medium onion, diced
    1 cup diced celery
    1 medium head cabbage, shredded
    1 carrot, diced
    1/4 cup butter
    2 tablespoons all-purpose flour
    3 cups 1% milk
    6 boneless skinless chicken thighs
    1/4 teaspoon pepper
    1/2 teaspoon dried thyme
    Chopped fresh parsley

Directions

In a large kettle, combine broth and vegetables. Bring to a boil. Add chicken. Cover and simmer for 25 minutes until chicken and vegetables are done.

In a saucepan, melt butter; stir in flour. Gradually add milk; cook and stir until thickened. Stir into vegetable and chicken mixture. Add pepper and thyme.; heat through. Garnish with parsley.

Note: 2 cups of fully cooked lean ham can be substituted for the chicken. Add ham at the end after vegetables have cooked.
