Kelly's Mexican Rice

Introduction

This is a moist rice and is great served along with chicken or beef. This is a moist rice and is great served along with chicken or beef.
Number of Servings: 4

Ingredients

    White Rice, long grain, 1 cup
    1 can chopped tomatoes
    Swanson Chicken Broth 99% Fat Free, 1.5 cup
    1 small can diced green chili peppers
    Green Peppers (bell peppers), 1 cup, chopped
    Onions, raw, 1 small chopped
    Olive Oil, 1 tbsp
    Chili powder, 1.5 tsp
    Garlic, 1 clove

Directions

Saute onions and garlic in oil until onions are translucent. Add all the rest of the ingredients and bring to a boil and reduce to a simmer for approx 20 min. I use a skillet with a tight fitting lid.
