Sweet Potato Sticks

Ingredients

    4 medium sized sweet potatoes, peeled
    1 tbsp vegetable oil
    1/3 cup grated Parmesan cheese

Directions

Cut potatoes lengthwise into 1/2 in thick slices. Cut slices into 1/4 in wide strips. Place potato strips in a large bowl.
Drizzle oil over potato strips; toss well. Sprinkle with parmesan cheese and toss well. Arrange potato strips in a single layer on baking sheets coated with cooking spray.
Bake at 400 degrees for 35 to 40 minutes or until potato strips are crisp and lightly browned, stirring every 10 minutes.
