Introduction

This is one of the best crab salad there is. Even picky seafood eaters will like this. This is one of the best crab salad there is. Even picky seafood eaters will like this.
Number of Servings: 16

Ingredients

    my recipe makes up to 16 servings
    In a Large Mixing Bowl
    Add two packages of imitation crab meat chopped
    1/4 c or 8 tbs cilantro chopped
    1 lg cucumber w/peel chopped
    1 lg Jalapeno finely chopped...wear gloves for protection
    5 lg tomatoes chopped
    1 lemon-cut one end off and squeeze as much juice as you can ...(watch for seeds to fall out)
    Mix well!!!
    You can serve this by itself or add it to corn tortillas (Tostada style) and garnish with a pinch of cheddar cheese.
    This does increase the fat...Mexican style will add on another 10 grams of fat per crab tostada
    by itself as a salad...its has only 5 grams of fat per 1 cup

Directions

there is absolutely no cooking involved. This is a perfect summer salad, main course, or side dish...you choose!!!

    Made it this evening. Came out really well. The ingredient details include an avocado, but I am not sure whether or not that is included in the total nutrition information. Also, what is a serving size? We added .5 cup of Hellmann's light Mayo and skipped the jalapenos. Tasted really good. Thx - 8/14/09

    The serving size is.5 cup on a corn tortilla...by itself..1 cup ;-)

    I would have to use real crab, and no Jalapenos for my husband sake. Although I would make these changes it sounds like a great refreshing recipe. Thanks - 7/27/09
