my recipe makes up to 16 servings
In a Large Mixing Bowl
Add two packages of imitation crab meat chopped
1/4 c or 8 tbs cilantro chopped
1 lg cucumber w/peel chopped
1 lg Jalapeno finely chopped...wear gloves for protection
5 lg tomatoes chopped
1 lemon-cut one end off and squeeze as much juice as you can ...(watch for seeds to fall out)
You can serve this by itself or add it to corn tortillas (Tostada style) and garnish with a pinch of cheddar cheese.
This does increase the fat...Mexican style will add on another 10 grams of fat per crab tostada
by itself as a salad...its has only 5 grams of fat per 1 cup

Thank you ...everyone who has tried it without me telling them the ingredients are amazed at how "unfishy" it is and its just so light. Let me know how you like it.
Made it this evening. Came out really well. The ingredient details include an avocado, but I am not sure whether or not that is included in the total nutrition information. Also, what is a serving size? We added .5 cup of Hellmann's light Mayo and skipped the jalapenos. Tasted really good. Thx - 8/14/09

The serving size is.5 cup on a corn tortilla...by itself..1 cup ;-)
