Introduction

This is Granny's zucchini bread by MSCAT3851 with enough modifications that I needed to recalculate. Serving size is 16 pieces per loaf because I can cut a loaf into 16 pieces easily whereas I goof when I try 12 or 14 pieces. I've also changed some other things too. Ingredients

    2 cups grated zucchini
    1 1/2 cup sugar
    2 eggs
    1/2 cup unsweetened applesauce
    2 cups white flour
    1 cup whole wheat flour
    2 tsp cinnamon
    1 tsp baking soda
    1/2 tsp nutmeg
    1/2 tsp baking powder
    3/4 tsp salt

Directions

Preheat oven to 350. Spray 2 loaf pans with nonstick spray. Combine zucchini, sugar, eggs and applesauce. Let sit. Combine flours, baking powder, baking soda, salt, cinnamon and nutmeg. Blend well. Add wet mixture to dry mixture. Mix until just combined. Evenly divide batter between 2 loaf pans. Bake for approximately 35 minutes. Test at 30 minutes. Let cool on rack in pan for about 10 minutes. Remove from pan. Cool thoroughly. Makes 2 loaves with 16 slices each.
