Number of Servings: 8

Ingredients

    1 cup olive oil
    2 Tbsp minced garlic
    3 lbs tomatoes, sliced 1/4-inch thick
    2 Tbsp salt
    fresh ground pepper
    1/4 cup finely chopped thyme

Directions

Yields about 1 pound or 8-10 servings
Warm olive oil over medium heat until begins to ripple slightly at bottom of pan, no higher than 140 degrees F. Add garlic and remove from heat. Infuse the oil for 2 hours; strain out garlic and reserve oil.
Preheat oven to 250 degrees F.
LIne two rimmed baking sheets with silicone mats or grease well with shortening
Brush the sliced tomatoes with garlic olive oil. Season with salt, pepper, and thyme. Place in pan in a single layer. Bake for 1 hour, then lower oven temperature to 200 degrees. Continue baking for 3-5 hours (or longer depending on moisture content of tomatoes) until chips are dehydrated and crisp. If not eaten immediately, chips should be stored in an airtight container.
