The recipe in the book makes 4, but I cut it down to 2. Also, this has no fruit (originally blueberries) but you can add about half a cup of whatever you like. Ingredients

.33 cup Quaker Oats (not instant)
.17 cup Heart Smart Bisquick (mix only)
.5 tsp Baking Powder
1.5 tsp Brown Sugar
1 tsp Canola Oil
.17 cup nonfat milk
.33 to .5 cups fresh or frozen fruit as desired (not calculated)
Directions
Set oven to 400 degrees. Mix first 6 ingredients in a bowl. Fold in berries. Spray baking sheet with nonstick cooking spray and form 2 mounds of batter on sheet (leave room in between 'em -- they expand!). Bake for 10 minutes. Makes 2 large scones.
