Chickpeas & Spinach

Ingredients

    3 tbsp. Extra Virgin Olive Oil
    1 medium Onion, finely chopped
    1 cup chopped Tomatoes
    3 tsp. ground Coriander
    1.5 tsp. ground Cumin
    .25 tsp. Garam Masala (an indian spice blend)
    .25 tsp. Turmeric
    15.5 oz. can Chickpeas, rinsed
    Salt to taste
    10 oz. package frozen Spinach

Directions

1. In wok or large skillet, heat the oil over medium-high heat. Add the onion and cook until edges are browned, about 4 minutes. Stir in tomatoes, coriander, cumin, garam masala, and turmeric. Lower the heat to medium and cook for 3 minutes.

2. Stir in chickpeas, add salt to taste and cook until heated through, about 5 minutes. Add the spinach and cook 5 minutes more.

Serve with any meat, poultry, or fish for a great side dish!
