Introduction

A great veggie soup! A great veggie soup!
Number of Servings: 8

Ingredients

    Olive Oil, 2 tbsp
    Onions, raw, 1 large
    Garlic, 2 clove
    Celery, raw, 2 cup, diced
    Carrots, raw, 5 small (5-1/2" long)
    Vegetable Broth, 2 cup
    *Peppers, sweet, red, fresh, 1 cup, chopped
    Beans, great northern, 2 cup
    Yellow Sweet Corn, Canned, 2 cup
    Beet greens, fresh, 4 cup
    Paprika, 1 tsp
    Salt, 1 tsp
    Thyme, ground, 1 tsp
    Pepper, red or cayenne, 0.5 tsp

Directions

Makes 8 servings

Saute Onions, garlic, clelry and carrots in 2 T. olive oil until softened but not browned. Add all remaining ingred. except for greens and bring to a boil. Lower heat and simmer 20 minutes. Add beet greens at the end and stir until wilted and heated through.
