Breaded Chicken Caserole

Introduction

A healthy and quick caserole that everyone in the family will love!!! Herbs and green beans can easily be substitued for different flavors such as chilies with corn for a spicier flavor, etc. A healthy and quick caserole that everyone in the family will love!!! Herbs and green beans can easily be substitued for different flavors such as chilies with corn for a spicier flavor, etc.
Number of Servings: 6

Ingredients

    One can cream of mushroom soup (with roasted garlic if desired).
    Two cans green beans (drained and rinsed).
    Three boneless skinless chicken breast.
    Two cups of milk (nonfat).
    Herbs to taste (i used itialian herbs).
    Bread crumbs, seasoned to taste.
    Parmesan cheese, freshly shredded or grated.

Directions

1. Preheat oven to 400 F. Combine herbs and milk in a bowl.
2. Filet the chicken by sliding your thumb through the tendons on the back of the breast. If there is a thick portion on the chicken you can use a sharp knife to cut through partially, but do not cut all the way through, to make it the same thickness as the rest of the breast.
3. Place chicken breasts in the milk bath and set aside (in the refrigerator if you wish to let it set for more than a few minutes, this will allow the flavors to set into the chicken better).
4. Open the cream of mushroom soup and spread on the bottom of a casserole dish.
5. Place the green beans (or vegetable of choice) in a single layer covering the top of the cream of mushroom soup.
6. Place half the bread crumbs on a plate, this will prevent the plate from becoming too wet from the milk.
7. Remove the chicken breast one at a time from the milk bath allowing most of the milk to run off the chicken breast.
8. Place chicken breast on top of bread crumb mixture and sprikle some of the remaining bread crumbs on top of breast, making sure to completely coat the chicken.
9. Place the chicken breast on top of the green beans.
10. Bake in oven for 20 minutes. Chicken should be almost done with only a slight pinkness in the center.
11. Remove from oven and sprinkle chicken with the parmesan cheese, coat as desired.
12. Place dish back in the oven for 10 more minutes or until the parmesan has begun to brown. Chicken should be slightly crispy on the outside, moist and juicy on the inside.
13. Makes 6 servings. Serve and enjoy!!
