Ally's Zucchini Bread w/Raisins

Introduction

This recipe makes 2 loaves. I've calculated each loaf as yielding 16 servings ... I cut thinner slices. Many may have to adjust the servings for 12 per loaf. This recipe makes 2 loaves. Ingredients

    Zucchini, 2 cup, grated
    Brown Sugar, 1 cup, packed
    Granulated Sugar, 1 cup
    Egg, fresh, 3 large
    Raisins, 1 cup
    Flour, white, 3 cup
    Vanilla Extract, 3 tsp
    Applesauce, sweetened, .8 cup
    *Canola Oil, .2 cup
    Baking Soda, 1 tsp
    Baking Powder, .25 tsp
    Cinnamon, ground, 3 tsp
    Allspice, .25 tsp
    Salt, 1 tsp

    **Please note ... the original recipe called for 1 cup oil. I substituted mostly all applesauce for the oil ... then just topped off the difference with a little bit of oil. That will explain the "odd" measurements there. I would've used 100% applesauce, but ran out of applesauce just shy of the 1c needed.

Directions

Preheat oven to 350. Spray two loaf pans with nonstick spray.

Mix eggs until frothy. Add zucchini, sugars, vanilla, oil/applesauce, and raisins and mix well.

Combine remaining ingredients in a separate bowl and mix. Gradually add to liquid mixture and mix well.

Divide batter equally into the two pre-sprayed loaf pans. Bake for 50-55 minutes on 350.
