Breadman's blueberry cake

Introduction

Ingredients

    1 cup brown sugar
    1 cup all purpose flour
    1 tsp baking powder
    1/1 tsp baking soda
    1/4 tsp salt
    1/4 cup butter
    1/2 cup light sour cream
    1 large egg
    1/2 tsp vanilla extract
    1 cup blueberries dusted with 1 Tbs flour
    canola spray oil

Directions

Makes 9 servings in a 8x8 baking dish.

In a food processor work bowl fitted the steel blade, blend the sugar, flour, baking soda, bakng powder, salt and butter until the mixture resembles bread crumbs. Scoopout 1/2 cup of the mixture to set aside. Whisk together the sour cream, eggs, and vanilla extract in a bowl. Add the dry mixture to the wet ingredients and mix until it is lump free. Do not overmix. With a spatula, spread the batter into the 8x8 pan sprayed with the canola oil. Spread the cup of blueberries on top evenly, pressing them slightly into the batter. Next cover the blueberries with the 1/2 cup crumb mixture you set aside. Spary the top lightly with some more of the canola oil. Bake at 325 for 35 to 35 minutes or until a knife inserted into the middle of the cake comes out clean.

Best served warm. Freezes well.
