Got this from the Hungry Girl 200 recipes under 200 calories cookbook. My husband liked it and he hates "diet" food!

Number of Servings: 4

Ingredients

    5 oz can chicken
    .5 c spinach, thawed, drained
    .5 c canned corn, drained
    .5 c canned black beans, drained
    1 T taco bell sauce, whatever flavor you like
    .25 c reduced fat cheese, I used 2% mexican
    4 whole wheat tortillas, 100 calories each

Directions

Mix all ingredients in bowl and nuke until heated through. Soften tortillas in microwave and spread each with 1/4 mixture. Roll like borrito. Spray each side with cooking spray. Arrange on baking sheet sprayed with cooking spray. Place in oven at 400. Heat 6 minutes on each side until browned and crisp.

Serve with light sour cream mixed with taco bell sauce and dry ranch seasoning mix (calculate cals separately).

  • These were really good. I doubled the recipe so that I didn't have half a can of beans left over and used cooked chicken instead of chicken out of a can. They're definitely not the same as the kind you'd get from a restaurant, but still delicious. - 12/2/09
