Grilled Fiesta Shrimp

Number of Servings: 6

Ingredients

    2 pounds large shrimp peeled and deveined
    1 tablespoon olive oil
    2 tsp creole seasoning, divided
    1/2 cup Mexican blend cheese (2%)
    1/2 cup drained canned whole kernel corn with sweet peppers
    3 tablespoons fresh chopped cilantro
    1 (15oz) can black beans, rinsed
    4 cups hot cooked long grain rice

Directions

heat grill to medium high
Put shrimp and olive oil in a ziplock bag with 1 tsp of creole seasoning and shake to coat.
Arrange shrimp in the middle of heavy duty foil
Top shrimp with corn, cilantro, and beans and sprinkle with remaining creole seasoning.
Fold foil together to cover.
Place on grill, cover and cook for 15 minutes or until done.
Prepare rice to make 4 cups.
When shrimp is done add cheese into the mix.
Serve shrimp mixture over rice.
Yield is 6 servings.
One serving is 3/4 cup of the shrimp mixture and 2/3 cup of the rice.
