Vermont Maple Flax Muffins

Introduction

The perfect snack or breakfast. Light and fluffy but full of whole grains, fiber and antioxidants, low fat and protein. Did I mention low carb. The perfect snack or breakfast. Light and fluffy but full of whole grains, fiber and antioxidants, low fat and protein. Did I mention low carb.
Number of Servings: 12

Ingredients

    3/4 cup flax meal
    6 ounce Yoplait Light & Fit Strawberry Yogurt
    1/2 cup maple syrup
    1/4 applesauce
    1/4 cup egg beaters
    1 1/4 cup whole wheat flour
    3 tsp baking powder
    1/2 tsp salt

Directions

Combine all ingredients. Stir until just moistened. Spoon into 12 muffin cups. Optional: Sprinkle with sugar and top with walnuts or dried raisins, or dried cranberries. Bake 400 F for 20 minutes.
