Momritz Chicken Fried Brown Rice

Ingredients

    2 Tbsp Canola Oil
    3 Medium carrots, chopped
    3 Medium celery stalk, diced
    1 Large onion, diced
    1 1 6oz package mushrooms, fresh, sliced
    1 pound Chicken breast, boneless, skinless - cut into small pieces
    1 cup frozen peas, thawed
    6 cups Cooked Brown Rice
    3 Tbsp Soy Sauce
    1 tsp Sesame Oil

    * Egg, fresh, 2 large (remove)

Directions

In wok over medium high heat add 1 Tbsp canola oil and chicken - stir fry until thoroughly cooked, remove chicken from wok
Add 1 Tbsp canola oi, carrots, celery, onions, mushrooms with 1 Tbsp soy sauce and stir fry until veggies are just fork tender - remove from wok
whisk eggs in a small bowl and then add to wok, scramble eggs
add all veggies, chicken and cooked rice, sesame oil and rest of soy sauce to wok. stir fry all together for approx 5 minutes.

Makes 10 1 1/2 cup servings
