Low-Carb Brownies

Introduction

Low-Carb Brownies! Low-Carb Brownies!
Number of Servings: 20

Ingredients

    1 cup Almond Flour/Meal (or finely ground almonds)
    1/2 tsp Baking Powder
    1/2 tsp Salt
    1 3/4 cup Splenda (or other powdered sugar substitute)
    1/2 cup Butter
    1/2 cup Cream Cheese
    2 oz Unsweetened Baking Chocolate
    2 oz Jello Sugar-Free Chocolate Pudding Mix
    2 tsp Vanilla Extract
    4 Large Eggs

Directions

Preheat oven to 350 degrees F.

Butter or grease a 9" x 13" cake pan. Stir together almond flour, baking powder, salt and Splenda; set aside.

In a microwave bowl, on high, melt the butter, cream cheese and the chocolate, stirring frequently (it usually takes me about 2 minutes, stirring every 30 or 45 seconds).

Add the Splenda mixture to the chocolate mix, plus the eggs and vanilla; beat until well blended.

Pour into the prepared pan, spread evenly.

Bake for about 20 minutes or until a toothpick inserted in the center comes out clean.

*NOTE - You can use 1 cup of butter if you don't have any cream cheese instead of the mix of both.
- Add nuts or other crunchies if you want. Pecans are good. The above nutritional info does not include the additions, of course. :)
